HISTORIA DE LUIS CANDELAS
En los primeros años del 1800 nace Luis Candelas Cagigal. Un mozuelo que va creciendo con fama y profesión de bandolero. Con chaquetilla azul turquesa, pantalón de Mahón y faja de Corinto, Candelas se convierte en un personaje célebre robando establecimientos y asaltando diligencias. Tras sus robos acude al Arco de Cuchilleros, uno de los lugares más típicos del antiguo Madrid, enclavado en la Plaza Mayor -donde se encuentran hoy en día “Las Cuevas de Luis Candelas” que en el siglo XIX era sitio concurrido por lo más castizo de la época y chicoleo de majas y chisperos.
Es precisamente allí, bajo el Arco de Cuchilleros y en sus cuevas, donde Luis Candelas -conocido así por sus amigos, y Don Luis Álvarez de Cobos para los que lo eran menos- se escondía con su “cuadrilla” y preparaba sus golpes, porque allí disponían de muchas salidas al exterior que despistaban a sus perseguidores.
Tras su matrimonio con Manuela Sánchez en la Iglesia de San Cayetano, marcha a Zamora donde reside algún tiempo hasta que decide volver a Madrid. En 1837 lo atrapan y hecha pública su sentencia, le condenan a muerte a garrote vil. Su ficha rezaba así: “Luis Candelas Cagigal, de 28 años, casado, natural de Madrid, con domicilio en Cuchilleros, 1, ladrón profesional, estatura regular, pelo negro, sin redecilla, ojos al pelo, boca grande y mandíbula prominente, bien formado y recio”. La condena se lleva a efecto en presencia del pueblo y en las afueras de las puertas de Toledo de Madrid. Sus últimas palabras fueron éstas: “SÉ FELIZ, PATRIA MÍA”
Años después, en 1949, Félix Colomo Díaz, reconocido torero de Madrid nacido en Navalcarnero, se enamora de las viejas cuevas bajo el Arco de Cuchilleros y las convierte en restaurante, para que la historia del viejo Madrid perdure en el tiempo. Con más de medio siglo de historia, “Las Cuevas de Luis Candelas” sigue abriendo sus puertas día a día, conservando el estilo y la singularidad de aquella época, y guardando el secreto de la mejor gastronomía tradicional para deleite de todo aquel que se sienta en sus mesas.
Luis Candelas’ story
In the first years of 1800, Luis Candelas Cagigal is born. He is a lad that grows up with bandit fame and profession. Wearing turquoise blue jacket, Mahón trousers and Corinto belt, Candelas became a famous personality, stealing in establishments and assaulting stagecoaches. After his robberies, he goes to the Arco de Cuchilleros, one of the most typical places in Madrid, located in Plaza Mayor, where in the present we can find ‘La Cuevas de Luis Candelas’. In the 19th century, this place was the meeting point of the most traditional people, chivalry of majas (ladies) and blacksmiths.
It is precisely here, under the Arco de Cuchilleros (cutlers’ arch) and its caves, where Don Luis Álvarez Cobos –Luis Candelas to his friends- hid himself with his gang and planned his ‘jobs’. Because this place had so many exits to confuse their pursuers.
After his marriage to Manuela Sánchez at the Iglesia de San Cayetano, he goes to Zamora, where he will stay for a few time, until his decision to return to Madrid. In 1837, he is caught and the decision is announced. He is condemned to die by garrotte vil (Spanish torture weapon). His file said as follows: ‘Luis Candelas Cagigal, 28 years old, married, born in Madrid, residing at Cuchilleros 1, professional thief, regular size, black of hair, without hairnet, black eyed, big mouth and prominent jaw line, well-proportioned, robust.’ The sentence was carried out in front of the people, on the outskirts of Toledo Gates (Madrid). His last words were: ‘be happy, my homeland.’
Some years after, in 1949, Félix Colomo Díaz, a well-known bullfighter from Madrid, falls in love with the old caves under the Arco de Cuchilleros and turns them into a restaurant, in order to preserve the old Madrid history. After more than fifty years since it opened its door, La Cuevas de Luis Candelas keeps doing it; preserving the that period style and singularity. The restaurant keeps the secret of the best traditional gastronomy, to delight those who sit at its tables.

Луис Канделас (Luis Candelas Cagigal) родился в начале 1800-х. Парень рос, приобретая славу и профессию разбойника. В бирюзовом пиджаке, нанковых брюках и с коринфским поясом Канделас превращается в знаменитость, так как он грабит заведения и нападает на дилижансы. После краж он приходил к Арке Кучиерос (Arco de Cuchilleros), одному из наиболее типичных мест старого Мадрида, расположенного на Пласа Майор (Plaza Mayor), где сегодня находятся «Лас Куэвас де Луис Канделас» (Las Cuevas de Luis Candelas) – место, где в XIX веке собирались типичные жители района, «махас» и «чисперос».
Именно там, под Аркой Кучиерос и в своих пещерах, Луис Канделас (для своих друзей), или Дон Луис Альварес де Кобос (для тех, кто ими не считался) прятался со своей «шайкой» и готовил набеги, потому что там у них было много выходов, что и путало их преследователей.
После брака с Мануэлой Санчес (Manuela Sánchez) в церкви Сан Кайетано (San Cayetano), он уезжает в Самору, где живёт некоторое время, пока не решает вернуться в Мадрид. L’Histoire de Luis Candelas
Luis Candelas Cagigal est né au cours des premières années de 1800. Il était un garçon qui a grandi et s’est forgé une réputation de brigand, qui portait une petite veste turquoise, pantalon de Mahon et ceinture de Corinto. Candelas est devenu un personnage très célèbre en tant qu’il a consacré sa vie à voler dans les magasins et à attaquer des diligences. Après une série de vols, il se dirige vers l’Arco de Cuchilleros, l’un des endroits les plus typiques de l’ancienne ville de Madrid, situé dans la Plaza Mayor, où aujourd’hui on peut trouver « Las Cuevas de Luis Candelas ». Au XIXe siècle, ce lieu était bondé de gens de l’époque et de la galanterie des majas (dames) et des forgerons.
C’est précisément ici, sous l’Arco de Cuchilleros et dans les grottes, où Luis Candelas (ses amis lui appelaient de cette façon) et Don Luis Álvarez de Cobos, (par tous ceux qui n’étaient pas si proches) se cachait avec sa bande et ils planifiaient leurs plans. Ce lieu avait beaucoup de sorties, ce qui permettait de confondre leurs poursuivants.
Après son mariage avec Manuela Sánchez de la Iglesia de San Cayetano, il se rend à Zamora, où il a vécu jusqu’à ce qu’il a décidé de retourner à Madrid. En 1837, il a été arrêté, et une fois la peine est rendue publique, il a été condamné à mourir garrotté. Son dossier disait: « Luis Candelas Cagigal, 28 ans, marié, né à Madrid, ayant son domicile dans la rue Cuchilleros , un voleur professional, taille normale, cheveux noirs, sans résille, aux yeux noirs, grande gueule, mâchoire saillante, bien proportionné et corpulent ». Il a été exécuté aux alentours de la Puerta de Toledo de Madrid, face aux citoyens. Ses dernières paroles prononcés furent : « SÉ FELIZ, PATRIA MÍA » (Sois heureux, ma patrie)
Quelques années plus tard, en 1849, Félix Colomo Díaz, torero renommé, né à Navalcanerno a été émerveillé par la beauté de ces grottes sculptés sous l’Arco de Cuchilleros. Il les a convertis dans un restaurant, afin que l’histoire de Madrid perdure dans le temps. Après plus d’un demi-siècle, Las Cuevas de Luis Candela (les grottes de Luis Candela) ouvrent ses portes chaque jour et elles gardent encore le style et la singularité typique decette époque-là. Le restaurant garde le secret de la meilleure gastronomie traditionnelle, ce qui fait la joie de tous les clients.
